Each year, the estate’s grapes are picked when
they are just ripe, and never over-ripened, to preserve the wine’s crispness and fresh fruitiness.
As the quality of the fruit is at its best, little intervention is required in the cellar.
Everything happens through the use of gravity,
the whole berries are placed in small thermo-regulated concrete vats. The wine is exclusively matured in barrels, half of which are new and half of which have been used twice before. The upcoming
harvest in 2015 will be elaborated with finesse
in an entirely new underground cellar, respecting the chateau’s architecture.
The estate makes a second wine,
Le Tertre de Canon, that is equally
produced with great care.
